Roast Garlic – better than butter

So I read an interesting tidbit about garlic the other day. I was trying to figure out how many calories are in a clove (basically praying that it wasn’t many) because roast garlic mashed on bread is my new favorite. It’s soooo good. And the bottom line is a clove of garlic has about 5 calories, but also lots of vitamin c (who knew?) and plenty of antioxidants. Healthy. Plus you can get rid of those pesky vampires that have been bothering you.

Also important to note is that when garlic is roasted, the flavor mellows out tremendously and loses that pungent aroma/flavor. Have I sold you yet? Might I add that it’s incredibly easy to do?

Simply cut the top off a head of garlic, drizzle with olive oil, wrap in foil and put in a 400 degree oven for around 45 minutes or until fork tender.

The paste just squeezes right out or can be removed with a fork. I got too excited and was trying to squeeze while it was still hot. You might want to let it cool a little so you don’t suffer from singed fingertips.

I mashed mine and spread on a piece of bread, but I have a sneaking suspicion it would be delicious on just about anything. Well, maybe not ice cream, but you get the idea.

  1. I love roasted garlic, too. Tonight I am going to spread it on a crusty corn tostada before adding smashed black beans, avocado, chopped greens and tomato. Chalupas with garlic! yum!

  2. Now I’m hungry! I would not want to live in a world without garlic. Have fun with the iPhone. If they are as much like the iPod as they say they are you’ll love it.
